VARIETY: 100% Moscato

PRODUCTION ZONE: Traditional Moscato d’Asti zone, with grapes from vineyards on medium-textured marl with fine quartz sand and fine silt predominating over lime. Trace elements are clearly expressed in the bouquet.

Details

VINIFICATION: Rigorously handpicked generally at the beginning of September. After a soft and rapid pressing the must is immediately refrigerated to halt fermentation and then stored at –2 °C. Fermentation takes place in steel tanks at +20°C until a 5° level of alcohol and 140g/l of residual sugar are reached. The wine is chilled once again to preserve the fragrance and characteristic aromas of the variety, bringing to the fore distinct notes of fresh and candied fruit provided by the soil.
