Nebbiolo d’Alba d.o.c.
ROSE’ BRUT SPARKLING WINE CLASSIC METHOD
Delicate notes of elderberry flowers, classic citrus scents and deligthful smells of fresh fields in the springtime. On the palate we find well balanced acidity and softness and good body. By definition a wine for festive occasions, it’s sapidity, lovely flavour and softness make the wine perfect for aperitif, a toast and fish based dishes.
VARIETY: Nebbiolo 100%
PRODUCTION AREA: Nebbiolo d’Alba area of production. Sandy soil with patches of limestone and clay, rich in minerals.
CULTIVATION OF THE VINEYARD: Upwards trained vertical trellised Guyot on hills with steep inclines of 40-50%, South East exposure
YIELD: 63 hectoliters.
VINIFICATION: After the manual harvest of the grapes in the first part of September, the Nebbiolo grapes are crushed and left to macerate for about 6 hrs. After the soft pressing, the must is then racked into temperature controlled tanks at 18°C. Fermentation finishes in about 20 days. In Spring of the following year, the wine is bottled with its own yeasts in the liqueur de tirage to initiate the second fermentation.
AGING: The wine spends about 36 months on the lees, with remouage bottle, before disgorging, which took place in July.
TECHNICAL SPECIFICATIONS: 12.5% alcohol; Pressure: 4,5 bar; 8 g / l sugar residue.
CULINARY COMBINATIONS: The bubble is the party wine by definition. The flavor and the softness of this wine make it perfect for an aperitif, a toast and dishes based on fish.
SERVING TEMPERATURE: 6-8 degrees C.
