VARIETY: 100% Nebbiolo

PRODUCTION ZONE: Nebbiolo d’Alba production zone. Sandy soil with veins of silt and clay, rich in mineral salts.

TRAINING SYSTEM OF VINEYARD: Freestanding espaliers with Guyot pruning on steep slopes with southeast exposure.

YIELD PER HECTARE: 63 hl

VINIFICATION: After the handpicked grapes are harvested in the first 10 days of September, the Nebbiolo is pressed and left to macerate for about six hours. The soft pressing separates the skins from the must, which is then decanted into thermostatted tanks at a controlled temperature of 18°C. Fermentation is complete in about 20 days. The following spring, the wine is bottled with its lees for the second fermentation, producing natural effervescence.

Details

AGEING: The wine stays 36 months on its lees with riddling of bottles prior to disgorgement in July.
